Made with Alpine milk and allowed to age so that the cheese develops a nice degree of sharpness, this is another one of Antonio Carpeneda’s (of Ubriaco fame) creations.
Vento d’Estate (summer breeze) is a cheese with character that is aged in barrels under layers of alpine grasses, herbs and flowers. This maturation treatment was inspired by Antonio and his wife getting stuck in their car with the windows opened behind a hay cart in the mountains. The summer breeze brought the aromas of the hay into the car. The hay gives the cheese a nice herby and floral aroma. The flavor pattern starts milky, develops some salinity and nuttiness and ends with a nice sharp and slightly sour finish.
We love to have this cheese with a little bit of fruit paste and dried salami on the side.
