Ubriaco (Drunkard) cheese hails from Treviso, a region in Italy where cheese makers have traditionally dunked their products in the remnants of the wine production (must) in order to preserve the cheese longer. Antonio Carpanedo is our favorite producer of this type of cheese (we typically also carry his Ubriasecco and Vento d’Estate).
The Raboso wine must gives the cheese a decidedly winy aroma and certainly contributes to a more complex flavor pattern. The cheese is aged for 6 months and then immersed in the must and red marc for weeks. The resulting cheese has a deep purple rind and a white paste with small holes. The flavor is decidedly fruity close to the rind, but creamy and lactic in the middle with a slight bite at the end.
Serve this cheese with some fresh fruit.
