Triple crèmes come in two varieties: buttery or heavy creamy in consistency. St Angel can be ranked in the latter category. It is indeed a heavenly cheese with an intense creamy interior under a magnificent white bloomy rind.
The makers use the same ultra-filtration method they use when they make their Fromager d’Affinois, but add a good helping of extra cream, which gives the cheese that unique velvety mouth-feel.. Although certainly palate-coating, this luscious cheese has a very clean finish.
Have this cheese with some fresh berries.
