A Cheddar that has been aged for between 3 and 5 years you would expect to be crumbly and dry, not so in the case of this wonderful creamy cheese made in Canada. The cheese is very smooth, yet still has the crystallized amino acids crunch that you expect from a cheddar that age, most importantly, it has the bite that goes with the age.
The cheeses are selected on an annual basis for at least three times before they reach the mature stage at which we sell them.
The slight tang in the flavor pattern makes this an ideal cheese to combine with fresh apples and pears.

As Unique As Quebec!
Everything in the description is true - it is a smooth aged cheddar - absolutely delicious. We enjoyed it with a glass of wine, but it would be equally as delicious melted over roasted potatoes!
