Florette is produced by Fromagerie Guilloteau in the Isere department near St. Etienne in the south-east ofFrance. The company is known for its creamy cheeses and has been in the dairy business since 1983. Their first cheese was called Pave d’Affinois and this name has stuck with them as a brand name for their entire range of products. The Florette cheese is produced using the microfiltration procedure introduced by this company which increases the yield of solids from milk.

Florette is a relatively recent discovery on our part, a triple cream goat cheese from France. Here is why we like it: the subtle goaty flavor, a bloomy rind and its gooey runny interior.

The cheese stays moist even after aging and can be used on a cracker, as a side in salads or simply with some dried or fresh fruit
