From one of our favorite Goat's milk cheese makers in Maryland, Firefly Farms, comes this beauty. Named after a secret mountain in the Adirondacks (hints: clad in blue moss and shaped as if a giant sliced off the top), the makers swapped out the ash that would normally have been used to coat this Valencay-style cheese, for a blue mold which in combination with the Candidum mold gives the cheese a little kick and a beautiful gray mottled rind. Because of the density of the cheese, no blue veining occurs within the cheese, the tang is spread throughout, though.
