- From The Smoking Goose Meatery in Indianapolis, Indiana : Spruce and Candy which is a pork salami aged in Spruce tips to give it a lemony and thyme flavor, and Saucisson Rouge, a spicy salame made with liver, heart and pork meat and spicy espelette peppers.
- From Charlito's cucina in Brooklyn, NY, Truffa Seca which is a pork salame filled with black truffles and their Cerveza Seca which is a pork salami with added Beer for a hoppy, sweetness.
- From Underground Meats in Madison, Wisconsin; Pork AAHLE Worscht which is a German style dry salame, Finocchiona which is a Italian fennel salame and Black Garlic, which has sweet slow roasted garlic that is carmelized and savory.
