Brunet is one of the cheeses in our “brain” line. The dairy Alta Langa puts a number of these cheeses out (Rocchetta and La Tur being others), Brunet is different in that it is a single milk cheese.
The cheese is named after one of the goat breeds in the region and is a luscious cheese in the Robiola tradition. A bloomy rind covers a rich creamy interior that is silky in mouthfeel, mushroomy in flavor and has the goaty tang that you would expect from a cheese like this.
Let this cheese come to room temperature and it will really explode in flavors and aroma.
Great on cracker with fresh fruit.
